How to calculate the right ratio of syrup to soda

Sharing knowledge - that’s why we are here… Have you ever wondered how to make a perfect forest berry soda? How much syrup do you need to add to get the right balance of sweetness and flavor? Well, I have created a handy google-sheets calculation that will show you exactly how to do it. Making soft drinks is all about ratio. You can’t just sweeten them by taste, because it won’t come out right. You need to follow a standard formula that ensures consistency and quality. The general rule is to aim for a 10:1 ratio of water to sugar, which means 10% of the liquid (by weight) should be sugar. However, this can vary depending on the type of flavor you are using. For example, you might want to use less sugar for sweet aromas like berries with vanilla (about 9%), or more sugar for spicy (e.g. ginger!), smoky or bitter aromas. The Very Best Lemon Soda

 Commercial drinks are mediocre- we all know that (do we)? However the issue is, that we are all accustomed to their basic character. Here is a recipe for a lemon soda - which is easily adaptable for grapefruit, orange, lime, lemon/lime etc. Please ensure that your fruits are well washed - best with bicarbonate and/or a solution of hydrogen peroxide - organic citrus is ideal! Lemon Soda Water 120 g sugar 5 washed lemons 2.4 g citric acid (lemon salt) Add sugar to a vacuum bag (or ziplock freezer bag). Use a Microplane grater and zest all washed lemons over the sugar. Vacuum (or press out as much air as possible. Let it macerate for several hours (you could also add the mixture into a water bath of 60°C for 2 hours - it speeds up the process). Add water and citric acid to dissolve the sugar and acid (amount depends on the process - if you are making a soda syrup and post mix, use only 100 ml water. Great tequila and a simple homemade housecrafted vanilla soda makes an incredible good highball

Today I have filmed a video. I hope, that I could become better in making videos about beverages - so I can spread the gospel of drinks... So I prepped (in front of the camera) a good bottle of cream soda. Cream soda, is basically vanilla soda. At times there are other spices or fruits also represented. However I intended to make a simple instruction video (so I can build upon) - and as I only had (real) vanilla essence, this was the easiest natural flavor I could think off. The recipe? 120g       white super fine sugar 1200g     water + ice 2.4g       citric acid 1 bs       vanilla essence Dissolve a sugar, vanilla essence & citric acid into a bit of room temperature water. When everything is dissolved add it to a carbonating bottle (Soda Plus in my case). Add the rest of the water and the ice. Charge it with 1 CO2 cartridge. Shake it. Let it rest for at least 1 minute. Yerba Mate Soda

Do you know, that it is pretty expensive to get Inca Kola in Dubai (or probably anywhere in the world except of Peru)? There is little which is more expensive than alcohol - but Inka Cola is one of those things. How expensive you ask? Amazon has prices of U$ 70.00 for a pack of 12 - we haven't spoken about shipment - or even the soda tax of 50%, which you have to excise in Dubai... I can be crazy - but I am (usually???) not that crazy! I know, that Inca Kola is quite a commercial product, which isn't shying away to use commercial flavorings, preservatives and so on. Why is it so expensive? That is a good question. Is it worth it? Probably not... I quite liked the Almdudler which I bought a couple of months ago. Also not cheap (but by no means that crazy). A Soda Review - Mountain Dew Black Label

via http://www.mountaindew.com/labelseries/ There is surprisingly less “soda variety” in the UAE - given, that a big part of the population doesn’t drink alcohol. The sin tax, which has been introduced in late 2017 didn’t helped the “soda game” (and admittedly I have to teeth-gnashingly agree, that it is a good thing: diabetes and other sugar related diseases are in the raise - especially here);  but yet in a country, which isn’t “fueled on beer and wine” there not much to choose from. Sure - there is Pepsi and Coca Cola - and their different flavors and products. But even my loved cherry coke (and strangely enough Pepsi Wild Cherry - I really like it - while I totally reject normal Pepsi) is a rather scare sighting. And yes - there is Canada Dry, Schweppes and Evervess (who needs this??) and occasionally Fevertree... Being part of the Pepsi-Co empire, Mountain Dew can be found here everywhere. Some specific varieties are though only obtainable in Petrol Stations...
