Is the Bar Revolution over?

There is an interesting article on  Thrillist ...: Is the Bar Revolution over? So what is my take on it? First of all the obvious - yes the Cocktail Revolution  is over ! Because there is no more resistance on Bartender-side / operator-side etc. when it comes to the use of quality (and premium) ingredients. Because there is no more resistance of guests to pay for a drink $20.00 (due to alcohol prices here in the UAE - drinks are even more expensive in Dubai). Because there are no more big arguments, if you should use fresh lemons, limes or other juices... This all are an indication: the revolution is over. The article though brings up another point: it is the commercialization of mixology. In this case I don't really understand the American way of thinking. Even though the prices are creeping up, a lot of Americans (especially bartenders) shy away of increasing prices. Is a cocktail worth $50.00? While this sounds outrageous, we surely have to look at other culinary art...

The misconception of Old Tom Gin

Some vintage Old Tom Gins These days I have thought a lot about gin. There are a lot of gins coming on the market and some people are already calling it the “new vodka”. While I do understand this notion, it is (out of my humble perspective) not at all comparable. Yes - gin has been really exploited in marketing (like vodka) - but it is really like any mainstream trend. Vodka has been always a bit different: while a lot of gins have significant differences (especially due to their different botanicals) - quality  vodkas lack the big differences and their subtle differences are subdued within the different moods people are in - or what they have eaten for breakfast or lunch, or if they had one drink before or simply with the mixers, the vodka is consumed with. Anyway - one big topic I have contemplated about is Old Tom Gin. In my eyes, this style has been largely misrepresented and misunderstood. To be honest, I shied away of this topic, because I think, people can misinterpret this - big time. I don't want to be part of the problem - I want to be part of the solution!  But when Chris, over at A Bar Above  discussed this subject- I literally could not resist to join into "the discussion". Bartender, Mixologist or only Barman?

We have a serious issue in bars about denominate the positions. Analogue to "hipsters hate hipsters", serious bartenders reject to be called mixologist. The reasons are simple. After the term became known in the public, a lot of bartenders used this word - unfortunately also a lot of people who are inexperienced. "Call me simply a bartender" is a trend, which is as unnatural and spineless as the desire to be called a mixologist, without the skills. Because lets be honest - even those, who state this, doesn't want to be seen as "normal" barman [or woman]. They want to be seen as specialists and experts. Hence the bartender title, will confuse people, who are not "bar affluent". What is the difference between the position of a bartender in a pub or dive bar to a bartender in a craft bar?
